Easy Baked Potato Skins Recipe
Here is a simple potato skins recipe that you can make in no time and serve to your guests or snack on during movie night or anytime.
4 medium potatoes
2 cups of shredded cheddar cheese
1/2 cup of crumbled bacon bits
1 cup of sour cream
1/4 cup of chopped chives or green onion
1 teaspoon of salt
1/2 teaspoon of ground black pepper
Wash and wrap potatoes in foil and bake for 1 hour at 375 degrees.
Allow potatoes to cool and slice in half lengthwise.
Scoop out the insides of the potatoes and place in a bowl.
Mix in sour cream, bacon bits and chives.
Spread mixture on top of the potato skins and sprinkle the cheese on top.
Bake for 5 to 10 mins at 375 until cheese is melted and the skins are heated through.
Serve and enjoy!
