You can have a vegetable medley lasagna or a lasagna with one main veggie like spinach lasagna or eggplant lasagna. Here are some great recipes for vegetable lasagna that you can cook for your family.
Easy Vegetable Lasagna Recipe
Here is an easy vegetable lasagna recipe you can make in no time. You can adjust the ingredients as you like. There are organic and gluten-free pasta lasagna noodles and low-fat or vegan cheese choices you can use to make this recipe even more healthy.
1 box of lasagna noodles (9 noodles)
1 cup of shredded carrots
1 cup of chopped onions
1 red pepper, diced
2 cups of chopped broccoli
16 ounces of shredded Mozzarella cheese
2 tablespoons of olive oil
1 teaspoon of Italian Seasoning herb blend (oregano, basil, parsley, rosemary, marjoram)
1/2 teaspoon of garlic powder
1/4 teaspoon of salt
1/8 teaspoon of black pepper
Boil the lasagna noodles per the package directions.
Saute the onions, carrots and peppers with the olive oil, herbs, garlic, salt and pepper over medium heat until tender. Remove from heat and add 1/4 cup of water and the chopped broccoli and cover with a lid.
Grease a lasagna pan with olive oil or cooking spray. Use half of the lasagna noodles to cover the bottom of the pan. Spread half of the vegetable mixture over the noodles. Sprinkle half of the cheese over the vegetables. Repeat for a second layer.
Cover lasagna pan with foil and bake at 350 degrees farenheit for 30 minutes.
Makes 8 servings.
